做巧克力的除了配料要好外,我认为最重要的是精磨,不过还要看你要做什么档次的巧克力,如果做代可可脂巧克力就不用调温,只要配料,精磨,浇模,冷冻,脱模,包装就可以了.

同意楼上的观点 巧克力最重要的是要做好精磨 有很多做巧克力原料的就是一个精磨缸  其余什么也没有的

我们厂巧克力的输送不用泵,把料从精磨缸里倒出后倒入加料斗内,加料斗的下面放上模板,巧克力浆料就会浇注在模板上.
